Try Delicious Potato Curry Recipe at Home

It does not take any time to cook Potato curry, so you can take it as lunch in the office. It can be served with roti or rice. The aroma of this vegetable is so good that even when you are not hungry, you feel like eating. So let's know how to make it at home-

Ingredients:

3 tablespoons oil

1 cup chopped tomatoes

1 inch Ginger chopped

2-3 green chilies

1/2 tsp asafoetida

1 teaspoon cumin seeds

2 tsp coriander powder

1 tsp fennel powder

1/2 teaspoon turmeric powder

2 teaspoons Kashmiri red chilli powder

1/2 tsp garam masala powder

400 grams boiled and peeled potatoes

salt to taste

1 teaspoon dry mango powder

2 tbsp chopped fresh coriander

Method of preparation of Potato Curry:

1. Add tomatoes, ginger and green chillies in a blender and blend.

2. Heat oil in a pan. After the oil is hot, add asafetida and cumin seeds and let them crack for a few seconds.

3. Now put tomato, ginger, green chilli paste in the pan and cook for 2 minutes.

4. After that add coriander powder, fennel powder, turmeric powder, Kashmiri red chilli powder and garam masala powder and cook till the oil separates from the edges.

5. Using your fingers, break the boiled potatoes and put them in the pan.

6. Add 2 cups of water, mango powder, and salt. Cook for 3-4 minutes. Add more water if needed. The gravy should be thin.

7. Cook the vegetables well and turn off the gas when the gravy is thick.

8. Now garnish by adding coriander and serve with puri.
