Ingredients:
80 gms pumpkin puree
200 ml almond milk
240 grams chickpea flour
1/2 tsp cinnamon powder
1/2 nutmeg powder
1/2 tsp clove powder
1/2 tsp baking powder
A pinch of salt
How to make Vegan Pumpkin Pancake:
1. Put pumpkin puree, almond milk and vanilla extract in a large mixing bowl and mix it well.
2. Combine chickpea flour, clove powder, cinnamon powder, nutmeg powder, baking powder and salt in another bowl.
3. Add wet ingredients to dry ingredients and mix well. If the batter looks slightly thick, add a little bit of almond milk.
4. Place a nonstick pan on medium flame and apply a little oil on it.
5. Put the batter on a hot pan and cook until bubbles form, its surface and sides will start to look golden brown.
6. Turn it over and cook for one to two minutes.
7. Serve it with maple syrup.
