Egg masala is a famous dish of South India. In addition to eggs, onions, urad dal and curry leaves are used. This instant prepared dish is delicious as well as nutritious. If you want, you can make it as a side dish or starter during parties or celebrations. It is prepared from very easily available ingredients in the kitchen. This easy-to-prepare egg recipe can be eaten at breakfast or at lunch or dinner with plain rice, roti or naan.

Ingredients:
Onion 5 (finely chopped)
Dry Red Chili 6
Whole Cumin 2 teaspoon
Urad Dal 2 teaspoon
A handful of curry leaves
A handful of coriander leaves
A pinch of salt
Oil half cup
Egg 8
How to make Egg Masala:
Step 1:
First, boil the eggs and peel them and keep them aside. Now dry roast the whole cumin, dry red chilies, urad dal and curry leaves on medium heat for about 1 minute. Roast the spices and cool them, and then grind them in a grinder to make powder.
Step 2:
Now heat oil in a pan. Add finely chopped onions and fry until golden. Now add salt and pre-prepared dry spices and cook for about 1-2 minutes.
Step 3:
Add boiled eggs to it and mix lightly. Turn down the heat and cook for a while.
Step 4:
Serve hot by garnishing with coriander leaves.
