 Step 1:

First of all, heat the refined oil in a frying pan on medium heat to make this easy sambar recipe. Add fenugreek seeds, chana dal, coriander, dry red chilli, 2 baby onions, garlic, and grated coconut. Fry all these ingredients for a minute or so. When done, remove from heat and leave to cool. After that, grind all these ingredients in a blender and keep them aside for later use.

Step 2:

Now heat a little oil in a frying pan on medium heat. Add remaining baby onions and brinjals to it and cook on low heat for 2-3 minutes. Now add pureed tamarind in a pan on medium heat. Add salt, turmeric powder, sambar powder, onion and eggplant. Boil this mixture together. After this, add masala, tur dal and boil again on low heat. If you want to make your sambar very tasty, then dry roast it by adding curry leaves in spices and grind it, then put it in sambar. This will add more flavor to this recipe.

 Step 3:

Meanwhile, put a little refined oil in a separate pan and fry the contents of the tempering. To give it a traditional South Indian touch, use coconut oil instead of refined oil. Pour this dish into a serving bowl and garnish with grated coconut, roasted red chillies and curry leaves. Serve hot with rice, dosa or idli.
