You can also serve rasmalai as a dessert after your meal. This will make your food taste twice as good. These Bengali sweets are very much liked nowadays.

Ingredients:

2 liter milk

2 cups sugar

3-4 cardamom

7-8 cashew pieces

saffron

Chironji

  1. To make rasmalai, first take the milk and keep it on the gas. Now add lemon juice and water to it.
  2. While running with a spoon for some time, the milk will burst in a while. After a while the chhena and water will separate, then turn off the gas.
  3. After doing this, take a sieve and place a cloth over it and sieve the chenna. This will separate water and chhena. Now wash the chena with clean water to remove the sourness of the lemon.
  4. Now keep the cloth for some time so that water comes out of it. When this is done, take out the chenna in a plate and kep it for a while. If the chenna is dried well then the balls will be made good.
  5. Now knead the chenna and knead it. When the chenna is smooth and kneaded, make round balls from it. Take care not to make the size of the balls too big.
  6. To make syrup, take a vessel, put it on the gas, add water to it, add 2 cups of sugar, cardamom and lightly heat it and keep it for cooking.
  7. When the sugar syrup starts to cook, then add the spherical balls to it. Now cover the pot.
  8. After some time remove the lid and stir with a spoon and cover it for 4-5 minutes. The size of the balls will double in no time.
  9. Let it cool down for a while. Your chenna is ready.
  10. To make Rabri, put milk in a pan and keep it on the gas. Now cook it when the milk starts boiling then add saffron in it and slow down the gas.
  11. Stir it with a spoon so that your milk does not burn. After some time add sugar and cardamom. When the milk becomes thick and the sugar also melts, then add cucumber and chironji pieces.
  12. Mix all the mixture well. Your delicious rasmalai is ready.
