Khandvi is a famous Gujarati recipe. This popular snack recipe made with gram flour is very tasty with coconut and garlic chutney. The specialty of Gujarati dishes is that it is a perfect blend of spices and tangy flavor. Gujarati food is easily digested, as it is made in very little oil. Khandvi is a simple recipe that can be made at home in a few minutes.

Ingredients:

1 cup gram flour

1 inch ginger

2 pinch salt

½ tsp turmeric powder

1 pinch Asafoetida (Hing)

3 cups Buttermilk

2 green chilies

3 tablespoons refined oil

1 tablespoon lemon juice

1 tsp mustard seeds

For decoration:

2 tsp grated coconut

¼ bunch green coriander

 Step 1:

Khandvi is a popular Gujarati snack. To make this delicious dish at home, first pour gram flour into a glass bowl. Then remove the seeds from the green chilies and make ginger and green chili paste.

 Step 2:

Now apply some oil on the inverted side of the steel plate or the top of the marble table so that the Khandvi mixture does not stick and the Khandvi rolls easily. Now mix gram flour with ginger and green chili paste, salt, turmeric powder, lemon juice, and buttermilk. Make sure that there is not a single lump.

 Step 3:

Now cook the mixture in a thick bottom pan while stirring it slowly until a smooth batter is formed. This may take a few minutes to form. Spread this hot mixture on an oiled plate or marble plate. This layer should be very thin.

 Step 4:

When it cools down, cut it into 2-inch strips and roll it tight. Make sure that the roll is not broken. Heat two tablespoons oil, add a pinch of asafoetida and mustard seeds. When the crackling sound comes, put the roll pieces on it.

 Step 5:

Finally, serve it hot by garnishing it with grated fresh coconut and finely chopped green coriander. You can serve Khandvi with coriander chutney, coriander mint chutney or garlic chutney.
