Kachori is the most famous of the street food of North India. It is a snack dish that is made by mixing a variety of spices with maida. It has such a unique combination of chaat and chutney that makes it a very spicy chaat recipe.

Ingredients:
1 cup all-purpose flour
1 2 cups moong dal
1 pinch Asafoetida (hing)
1/4 teaspoon grated green chillies
1/4 teaspoon garam masala powder
2 teaspoons dry mango powder
1 cup refined oil
3 tablespoons Whipped Yogurt
2 tablespoons melted ghee
1/2 teaspoon cumin seeds
1/4 tsp grated ginger
1/4 teaspoon coriander powder
1/2 teaspoon red chilli powder
1 tbsp gram flour
2 pinch salt
For garnishing:
2 tablespoons save
2 tablespoons Bundi
How to make crispy Kachori Recipe:
Step 1:
Put maida, gram flour and ghee in a bowl. Then knead it well with salt and some water and prepare a hard dough. Make small dough balls and keep them separately.
Step 2:
Heat a pan on low heat and add 1 to 2 tablespoons of oil to it. Then, asafoetida and cumin seeds for 30 seconds. Then add moong dal and cook for a minute.
Step 3:
Now add green chilli paste, ginger paste, garam masala powder, gram flour, red chilli powder, mango powder, coriander powder and salt as well, then mix well and cook for 5 to 6 minutes.
Step 4:
Now roll the dough into small or medium size and put 1 to 2 small spoons in the middle of the filling and fold it well so that their spices do not come out.
Step 5:
After this, heat the oil in a deep frying pan on medium heat. Then after frying the kachoris on both sides until they turn golden brown.
Step 6:
Add green chutney, sweet tamarind chutney, red chilli powder, onion, cumin powder, coriander leaves and salt on top and serve with garnish with boondi or sev.
